Post-Christmas Corn Fritters

So it’s that time of year again where we pick ourselves up from the hectic pace of Christmas and New Year and settle back into reality. Despite the absence of decorations and festive cheer, there is always one reminder of weeks past – one that I always form a love / hate relationship with… yes it’s that remaining big hunk of ham that takes up half the refrigerator! It’s hard not to notice it really?!

We always get a ham on the bone which means for the first week or so it doesn’t matter how many times you sneak to the fridge for “one more slice” it never seems to make a dent in the mere mass of it. There are usually bowls of salads left over too which conveniently for the first few days go sooo well with ham, particularly creamy potato salad…yum!

But you get to the stage where eggs and ham for breakfast, ham and salad for lunch and ham toasties for dinner, becomes a bit much! So, in the next week I am going to provide a few suggestions for stretching out that post- Christmas ham experience with a few favourite recipes, starting with Corn Fritters.

My mum used to make these little beauties all the time when I was a kid. Not only are they great by themselves (particularly cold the next day) but they go SENSATIONALLY with ham. I tend to make a big batch to have in the fridge… actually if I were being honest – a small batch as they are quite moorish and rarely make it past the pan!

This recipe is for fritters to accompany ham though you can also add chopped ham to the mix to make “Corn and Ham fritters”, whatever you fancy. Also, I have used a chopped onion as that’s all I had in the fridge, they are tastier if you use spring onions or chopped chives.

Corn Fritters

Ingredients

  • 410g can Corn Kernels
  • 410g can Creamed Corn
  • 1 cup Self Raising Flour
  • 2 Eggs
  • 1 Onion (finely chopped)
  • 1 cup Milk
  • Salt and Pepper

Cooking directions

  1. Combine eggs and milk in a jug
  2. Sift the flour into a bowl
  3. Add all remaining ingredients to flour including egg and milk mixture and mix until just combined
  4. Heat a non-stick frying pan and spray with cooking oil
  5. Fry fritters in batches until golden
